The Distillarium is a craft distillery in Central Washington, producing PNW whiskey and brandy guided by a simple belief: spirits should not be rushed.
Located in Yakima Valley — one of the most agriculturally rich regions in the Pacific Northwest — we are surrounded by the raw materials that define our work. Here, grain develops structure, grapes build depth, and the seasonal climate creates ideal conditions for both whiskey and brandy production.
In a market overrun by those taking shortcuts, we pride ourselves in doing the opposite. This means we know our farmers. We mill our grains on-site, and we distill on them too. Our spent mash goes back to Yakima Valley farmers to feed their livestock. At The Distillarium, everything comes full circle, and that’s what we like to use to define the word “craft.”
